Brie De Meaux, one of the most beloved cheeses in the world, originates from the Ile-de-France region. First created by monks in the priory of Rueil en Brie during the Middle Ages, this soft cheese even caught the attention of Emperor Charlemagne in 774, who loved it so much he ordered regular deliveries to his castle in Aachen.
Known for its mild, buttery flavor and creamy texture, Brie is made from cow’s milk and traditionally aged in large wheels. Beneath its delicate edible rind lies a smooth, pale yellow interior that becomes irresistibly creamy at room temperature. Originating from the Ile-de-France region, Brie De Meaux was first created by monks of the priory of Rueil en Brie in the middle ages. In 774 the French Emperor stopped at the priory and discovered the cheese it pleased him so much he asked for regular deliveries to his castle in Aachen. Hence the cheese was known as the king of cheese. This cheese when young can handle strong rich mature reds, it also pairs well with wines that have a slightly nutty flavour. As the cheese matures, chardonnay and bubbles are a good companion.Your nose and palate can tell you a great deal about the flavour and aroma of a cheese. The cheese is best served at room temperature and the wine not to cold. The flavours vary between pleasant, clear, fresh, sweet, sour, while mouldy, grassy, ammonia and even barn like characteristics are found in some cheeses.
